Here's a simple and delicious recipe for Vegetable Pulao that you can try at home:
Vegetable Pulao Recipe
Ingredients
Rice 1 cup basmati rice
Vegetables 1 cup mixed vegetables (carrots, peas, beans, and bell peppers)
Onion 1 medium onion, thinly sliced
Tomato 1 medium tomato, chopped
Ginger-garlic paste 1 teaspoon
Green chilies 1-2, slit (adjust to taste)
Whole spices
1 bay leaf
2-3 green cardamom pods
3-4 cloves
1 small cinnamon stick
Cumin seeds 1 teaspoon
Turmeric powder 1/2 teaspoon
Garam masala 1/2 teaspoon (optional)
Salt to taste
Oil or ghee 2 tablespoons
Water 2 cups
Fresh coriander leaves for garnish
Instructions
1. Rinse the Rice
- Wash the basmati rice under running water until the water runs clear. Soak it in water for about 20-30 minutes. Drain and set aside.
2. Cook the Vegetables
In a pot or pressure cooker, heat oil or ghee over medium heat.
Add cumin seeds and let them sizzle.
Add the bay leaf, cardamom, cloves, and cinnamon. Sauté for a few seconds until fragrant.
3. Sauté Onions and Spices
Add the sliced onions and green chilies. Sauté until the onions are golden brown.
Stir in the ginger-garlic paste and sauté for another minute.
- Add chopped tomatoes and cook until they soften.
4. Add Vegetables and Spices
Add the mixed vegetables, turmeric powder, garam masala (if using), and salt. Stir well and cook for 3-4 minutes until the vegetables are slightly tender.
5. Add Rice and Water
Add the soaked and drained rice to the pot. Gently mix to combine with the vegetables.
Pour in 2 cups of water and bring it to a boil.
6. Cook the Pulao
Once it starts boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 15 minutes (if using a pot) or 1 whistle (if using a pressure cooker).
Do not open the lid immediately; let it rest for 5-10 minutes before opening.
7. Fluff and Serve
Gently fluff the pulao with a fork. Garnish with fresh coriander leaves.
Serve hot with raita or salad on the side.
Tips
You can add any vegetables of your choice like cauliflower, potatoes, or corn.
For added flavor, consider using vegetable broth instead of water.
Adjust the number of green chilies based on your spice preference.
